Match the sauce to the cooking stage

  • Marinades: add flavor before cooking; discard liquid that contacted raw meat unless it is boiled safely.
  • Mops and bastes: apply during cooking with a dedicated clean tool.
  • Finishing sauces: brush on near the end, especially when they contain sugar.
  • Table sauces: serve separately and protect them from raw-food cross-contamination.

Build a useful dry rub

Start with salt, then add pepper, paprika or chile, aromatic spices, and a modest amount of sugar when appropriate. Record the weight of each ingredient so a successful blend can be reproduced.

Before buying a packaged product

Read the ingredient and allergen statements, compare sodium and added sugar, check the seal and date, and confirm storage instructions with the actual manufacturer or retailer.
